Scones for breakfast? That's right! These banana scones , flavored with cinnamon and ginger, are sugar-free and rich in fiber and healthy fats. Perfect for starting the day full of strength and energy!
Ingredients:
80g of chopped walnuts;
70g of wheat flour;
70g of whole wheat flour;
70g of oat flour;
1 tablespoon of cake yeast;
1 teaspoon of ground cinnamon;
½ teaspoon of powdered ginger;
1 pinch of nutmeg;
2 ripe bananas;
70ml of oat vegetable drink;
85g coconut oil;
2 tablespoons of honey.
Preparation method:
In a large bowl, mix all dry ingredients well, including the coarsely chopped walnuts;
In another bowl, combine the sliced bananas, oat milk, coconut oil, and honey. Blend everything together using a hand blender until smooth. Alternatively, you can use a blender.
Then, add the wet mixture to the dry ingredients. Mix well until you have a thick, moist dough. Once ready, place the scone dough in the refrigerator for at least 10 minutes to firm up.
Meanwhile, preheat the oven to 350°F (180°C) and line a large baking sheet with parchment paper. Finally, drop spoonfuls of dough onto the parchment paper, forming tall balls.
The scones are ready once they're golden brown, after about 25 minutes. After that, repeat the process until you've used up all the dough. Let the scones cool on a wire rack.
To finish, top the scones with your favorite topping ! Honey and walnuts seem like a great option to me.
